Here it is! After so many failures (just ask my family, they have eaten some terrible monkey bread- and I didn’t even know monkey bread could be terrible), I have finally figured out the perfect recipe for vacation worthy money bread. It is fluffy, ooey, gooey, and delicious! Not only that, it is straight out of your hotel room microwave.
Microwaves tend to have two issues. First, they don’t cook evenly. Using a silicone bundt pan combats this problem for you. Bonus, they are non stick, so clean up is super easy, which your going to need when cleaning up using a tiny sink.
Secondly, microwaves tend to dry things out. Think about the last time you tried to thaw chicken using the ‘thaw’ button. Some edges of the chicken end up white and dry- which is not delicious. The same thing can (and does) happen to your monkey bread if you don’t make a couple alterations from your typical oven recipe.
Using all brown sugar instead of a combo of white and brown really helps to lock moisture around each nugget of goodness. Also, adding a bit of water helps keep your sauce saucy and your monkey nibblets just right
I lied. I have one more amazing tip. Skip the fridge biscuits. Trust me. They are so unimaginative. Go with fridge cinnamon rolls. Not only are they already way better for monkey bread because of their sugar and cinnamon content, they have frosting packs. Yes, the little bags of liquid powdered sugar that will take your monkey bread from average to extraordinary. Plus, Aldi carries them at a super reasonable price.
You will need:
Microwave
Silicone bundt
Scissors, knife, or plastic knife. Hands will even do in a pinch
Gallon ziploc
1 1/4 c brown sugar
2 tsp cinnamon
Pinch salt
2 tubes fridge cinnamon rolls
1 stick butter
1/4 c water
To make:
Before you leave home, toss brown sugar, cinnamon, and salt together in a gallon zip lock and label it. When ready to prep, cut your biscuits in quarters. Cinnamon rolls will fall into 12+ pieces after that cut. Enjoy! More pieces, less work, another cinnamon roll win. Toss dough in sugar to coat and pour everything into the bundt, making sure it’s level. Cut butter into thin slices and lay evenly over top. Pour water over everything. Microwave 6 or so minutes, or until just cooked. Let set for 5 to 10 minutes before inverting on a plate. At this time, if you notice it is undercooked anywhere, you can microwave another minute or so. Top with luscious cinnamon roll frosting. Indulge. But only on vacation, ok? Or holidays. Or birthdays. Or on the weekend because everyone is home.
