Memories! Sweet ice cream – cookie sandwich memories!

Back in 2016, Mr. Mouse and I stayed at All Stars Music for the first time. Our girls were so cute and tiny then. It seems like ages ago, but I guess it really wasn’t. It was our last trip as a family of 4, sigh!

We fell in love with the ice cream cookie sandwiches they had at the resort quick service restaurant. For 1 snack credit, we could get two giant cookies smothered in the ice cream of our choice. I would hazard a guess that I ate at least 5 of those sandwiches on that trip.

While I can’t exactly replicate them, nor would my waist line appreciate it, I have come up with a recipe that brings the spirit of the mouse!

Let’s start with the cookies:

Cream, little girl! Cream!

V. Mouse finishes it all up with lots of yummy chips!

Dropped in heaping teaspoons(ears) and tablespoons(heads)

Cheeeeeese!

Baked. Cooling. Can’t wait!

Ingredients

2/3 cups softened butter

2/3 cups shortening

1 cup brown sugar

1 cup white sugar

2 eggs

2 tsp vanilla

3 cups flour

1 tsp baking powder

1 tsp salt

12 oz chocolate chips (we did about 4 oz each semisweet, milk chocolate, white chocolate, butterscotch)

Method

Preheat oven to 375F. Cream together sugars, butter, and shortening. Add egg and vanilla, combining well. Stir in salt and baking powder well. Add flour and mix until combined. Lastly, add chips and stir. Drop by round teaspoons and tablespoons on parchment or silpat mat. Bake for 10 minutes, or until desired.

I did have to remove the “ears” from the tray and bake the heads a few more minutes.

Now for the ice cream:

Mhmmmmm! Homemade no- churn ice cream!

This ice cream comes together so quickly. So quickly, in fact, that I barely got any pictures before it was done.

Look at all the stuff in there! Peanuts, chocolate chips, salted caramel, peanut butter! Could there be anything greater?

Ingredients

2 cups cold whipping cream

1 – 14 oz can sweetened condensed milk

1 tsp vanilla

Pinch of salt

Optional: anything you want to mix in. We chose peanuts, chocolate chips, salted caramel sauce, and peanut butter

Beat cream, salt, and vanilla together

Drizzle sweetened condensed milk in. I added a teaspoon of cinnamon at this stage to make cinnamon ice cream. Yummmm!

Method

In a mixer, on medium to high, beat cream, salt, and vanilla until light and fluffy. Turn down to low, drizzle the sweetened condensed milk in, allowing it to just barely encorporate. Don’t over mix! Pour half of the mix into an 8×8 pan. Add mix ins. Top with the rest of the sweetened cream. Swirl a knife through to incorporate everything. Freeze until solid. Scoop and enjoy!

Add a big scoop on that cookie!

Don’t forget to tuck your ears in!
