I love mac n cheese. I am a purist. It must be made with milk, cheese, butter, eggs, and little else. This recipe is insanely easy… so easy you could even cook it on vacation in your hotel room😉 If you top it with delicious bbq pulled pork or chicken, you have a meal sure to please.
The most amazing part is that you start with dry noodles. If you use veggie noodles, it is a great way to sneak veggies in your family without having to prep them separately.
In your crock sleeve, combine dry noodles, evaporated milk, milk, salt, pepper, eggs, softened butter, and freshly grated cheese. Stir well, set on low, then come back about 3 1/2 hours later to find deliciously bubbly, cheesy, buttery, perfect mac n cheese.
Bbq pulled chicken is insanely easy in your 20 oz dipper crock. Combine precooked chicken with bbq sauce and let it bubble away.
Mac n cheese, low n slow:
Ingredients

12 oz. Dry macaroni noodles (We use hidden veggie)

14 oz can evaporated milk

2 cups milk (You probably don’t have measuring cups with you, so you need to think creatively. Your can of evaporated milk was 14 oz, so do a can and a splash. Or wash out your 16 oz bbq bottle and use that)

1 egg (use 2 if you like a firmer casserole)

1 tsp kosher salt or 1/2 tsp regular salt (before you leave home, check to see how much 1/2 or 1 tsp fill your spoons you are bringing)

Pepper to taste

12 oz grated cheese, which equals 1 1/2 blocks (Please don’t use pre-shredded. It is coated in anti-caking agents. It just don’t melt right.)

3 Tbs softened butter (Thankfully, butter is labeled)
Method
Stir well to combine all ingredients in a 3 quart or greater slow cooker on low. Cook for 3 1/2 hours with the lid on, or until bubbly, cheesy, and set.
Pulled BBQ Chicken:
Ingredients
- 8 oz cooked chicken (I often cook a whole chicken, then portion the meat into 8 oz bags and freeze for later)
- 16 oz of your favorite sweet bbq sauce
Method
Combine chicken and sauce in your dipper crock. Allow to bubble away until heated through, about one hour. As it warms, the chicken should shred.
There is little else tastier than a helping of mac smothered in bbq meat! Enjoy.
This last trip I totally forgot the evaporated milk. I used extra regular milk and about 4 oz of cream cheese. I also threw in the leftover bacon bits from another day. The result was fantastic!
