Copycat Avocado Toast #3: The Wave at the Contemporary

On to the next avocado toast! This one kept coming up, especially on all the vegan blogs. I was a bit nervous to try it, but had everything I needed. As an important note, ours is not vegan, as I added butter to the jam. It could easily be substituted, though.

The Wave’s Breakfast Menu

The most intimidating part of this was the caramelized onion jam. I was unable to find onion jam that fit with our keto diet. Ok, I couldn’t find onion jam at all. There were some fun bacon onion jams, but nothing that was just right. So to the kitchen I sent Mr Mouse.

He started by dicing 2 onions finely. Then he cooked them on medium on the stovetop until translucent in 2T oil. A heavy pinch of salt, several cracks of black pepper, and ¼ cup of sugar or sweetener (I use equal parts sucralose, Splenda, and monkfruit/erythritol blend) was tossed in. Mr. Mouse then stired that frequently until it was caramelized, about 10-15 minutes. 2T vinegar (and, because we used sugar substitutes, a tiny pinch of xanthum gum) were added and cooked down. Finally, 1T of butter was mixed in at the end, just to make it smooth.

Once my toast was nice and crisp, I slathered about 2T onion jam all over it.

Then, ½ an avocado, mashed well, was spread all over that onion jam. We added salt and pepper to bring out the flavors.

The description calls for watercress. We only have spring mix, so a few leaves of that topped the avocado.

I have read several descriptions of this toast. Some call for sunflower seeds. Some call for pepitas. We went for both!

Finally, a few paper thin slices of radish. This gave it gorgeous color and a peppery finish.

Both Mr. Mouse and I were worried about this one before we tried it! It seemed too simple and bland. But let me tell you, it was anything but! That onion jam was so complex. It was sweet, tangy, and savory all at the same time. The seeds brought a needed crunch. Even the radishes, which I usually take off, were perfectly peppery.
