The final installment of our avocado toast from WDW is our take on a new brunch item at the Boathouse in Disney Springs. This is a Signature restaurant, with Signature prices. These mice haven’t ever visited for that reason, but you can bet we are going to enjoy this recipe!
Brunch at The Boathouse is still pretty new (it started at the end of February 2021), so there isn’t that much information out about it, yet. From what I have seen, for the avocado toast they top multigrain toast with avocado, tomatoes, pickled red onions, feta, and two eggs any style! Since we still have pickled red onions left over from our first avocado toast, this one was a breeze to put together.
I started with super crunchy keto white bread toast. If you have read my other avocado toast posts, you will remember that this is where I take a my liberties with a recipe! Then, ½ smashed avocado, salted and peppered.
I topped that with pickled red onions, cherry tomatoes, and feta cheese.
Finally, an egg. This is such a simple recipe.
Not only was it simple… it was my favorite recipe yet! I have fallen madly in love with pickled red onions. They are sweet, spicy, and tangy all at the same time. They have boosted every recipe I have thrown them in to. Feta is so salty and tangy, too. These bold flavors add such character to the boring avocado.
