Little Mermaid Night

Little mermaid! Another of the movies of my youth! So many fond memories of watching this movie, as a child, and with my children! Let’s dive on in to a feast fit for a mermaid… or a human! Dinglehoppers optional. On the menu for today are crab sandwiches atop seaweed salad. For those not up on ocean flavored food, never fear.  Chicken salad is the filling on the sandwiches, and it is just a regular old salad dressed up a bit!

Let’s start with the salad.

Ingredients for salad:

  • Ranch dressing
  • Avocado
  • Shredded cheese
  • Salt to taste
  • Bagged salad mix
  • Little broccoli chunks, if desired
  • Goldfish crackers

Ingredients for crab sandwiches:

  • Mini croissants
  • Prepared chicken salad
  • Toothpicks
  • Green olives

Method:
Combine ½ cup ranch dressing with 1 medium mashed avocado and sur until smooth. Add salt to taste. Mix in ¼ cup shredded cheese. Top your bagged salad mix with broccoli if desired and toss with dressing. Place on your plates. Add goldfishcrackers on top of your bed of seaweed.Slice croissants almost through horizontally. Stuff with chicken salad. Skewer an olive on each toothpick and place 2 eyes on each crab. It really is that easy! And adorable. Under the sea!For dessert, we whipped up these quick clam shell cookies.
Ingredients:

  • Cupcake liners
  • Large pearl sprinkles
  • Vanilla frosting
  • Danish butter cookies

Method:
Spread a heaping teaspoon full of frosting on the top of one cookie. Add a pearl and perch another cookie on top. Serve in a cupcake liner for a moe delicate presentation. And we crafted! I had this amazing idea to glue cupcake liners along the mermaid tales to make them all ruffly (thanks to a Google search), but my kids just wanted to color and do whatever! I tried to have them glue pieces of tissue paper to add texture to the coral, but they wouldn’t do that either. So I went with it! And even though it wasn’t what I had planned as my craft, they had fun.  They taped their art on the wall after and were so proud of themselves! It was a lesson I really needed in that moment. Let the kids create as they desire!
